Usually when I cook, I just freestyle it. I’m a rebel, and following recipes is tough for me because I want to break the rules. But there’s one chef out there who I usually follow her recipes to a T, and that’s My Nguyen from My Healthy Dish.
She’s coming out with a new cookbook, so I wanted to test out one of her recipes before I received my pre-ordered book. She released 3 recipe excerpts, and as I was at the store trying to figure out what to BBQ on nice Sunday afternoon, the Shrimp Scampi Tacos with Mango Avocado Salsa was just perfect for that! So I picked up my ingredients and hit the kitchen. I actually prepped outside, which was so nice to do!
Since I was going to be BBQing the shrimp, I actually did have to change up the recipe a bit. My’s recipe is made on a pan, so I just used her scampi sauce as a marinade. I let it sit for about 30 minutes while I made the Mango Avocado Salsa….and had some wine and made a flower arrangement.
Now for the salsa, I followed the recipe exactly, which surprises me because I can make salsa out of anything, and worked for years making salsa in classrooms with students.
After the shrimp was grilled for a few minutes, not too much to overcook, I warmed up some tortillas and built the tacos with the shrimp, the salsa, and a little dollop of sour cream.
This recipe was so simple, tasty, and most important it was healthy! I highly recommend this recipe and can’t wait to receive her book. Her book is available for pre-order on Amazon and is on sale now for only $16!
